Poblano produces broad, dark green peppers that are usually about 4–6 inches long and ripen to deep red-brown. The flavor is earthy and rich with mild heat, commonly around 1,000–2,000 Scoville heat units. It is best known as the classic pepper for chiles rellenos, and the dried ripe fruit is called ancho.
