Big Jim produces very long New Mexico-type peppers that often reach 8–12 inches. The flavor is rich and mildly hot, generally around 500–3,000 Scoville heat units, and becomes sweeter as the fruit ripens red. It is especially known for its large size and is excellent for roasting, stuffing, and green chile.
