Anaheim produces long, narrow peppers that are usually about 6–8 inches long and ripen from green to red. The flavor is mild and slightly sweet with gentle heat, commonly around 500–2,500 Scoville heat units. It is especially popular for roasting, stuffing, and green chile dishes.
